Stuffed Mushrooms
24 large fresh
mushrooms
1 Tablespoon olive
oil
1/2 C. finely chopped
cooked ham
1/4 C. crumbled blue
cheese
3 Tbsp. fine dry
bread crumbs
2 Tbsp. snipped fresh
parsley
2 Tbsp. olive oil
2 cloves garlic,
minced
1/8 tsp. ground red
pepper
Wash and drain
mushrooms, remove stems and save for another use. Brush mushrooms with
oil. Place mushrooms on an ungreased 9 x 13 pan.
Combine ham, blue
cheese, bread crumbs, parsley, 2 tablespoons olive oil, garlic, and red pepper.
Spoon into mushrooms
and chill, cover 2-24 hours.
Bake uncovered at
425° for 15- 17 minutes or until tender and hot.
Makes 24 stuffed
mushrooms.
